So, this is what I've been putting down the hatch lately. So yummy. And did I mention so easy. Mine doesn't look so pretty but all I do is:
2 thick slices whole grain bread-toasted
1/4 ripe avocado-spread across each slice
salt + pepper this layer
sliced roma tomatoes (or if you have those roasted tomatoes from last week)
salt + pepper
and voila. delish!

I lived on avocado, S&P on pumpernickel bread when I was pregnant with my with my youngest. Yummy recipe:)
Love the new blog look and that looks right up my alley! I have been eating avocado on toast with a fried egg lately and it is divine!
